Thanks for the Answer! this is perfect for my question 2! However as for question 1 im trying to maintain the structure of a Record Object as my actual use is more complex. so creating a @track var for every field was what I wanted to avoid.

@Bika, I have updated my answer. For the use case you described, I would recommend you to use lightning-record-edit-form
