I'm trying to create a sharing rule on Opportunity, criteria-base, and I want to add the field Amount to this rule.
Field Amount is not available and I'd like to know why.

Criteria based sharing rule supports only certain data type and amount is data type currency, that's the reason you don't see it. Below is the list of supported data type -
Auto Number, Checkbox, Date, Date/Time, Email, Lookup Relationship (to user ID or queue ID), Number, Percent, Phone, Picklist, Text, Text Area, URL
